I was born and raised in the archipelago of Puerto Rico. My experiences with food in the island was one of the main drivers that led me to study nutrition and pursue grad school. Currently, I am working on characterizing the type of fiber in Hass avocados and evaluating the changes in fiber during ripening. We are also planning to start our clinical trial looking at the effects of avocado intake on gut and cognitive health.
